Double Chocolate Chip Cookies

We all need positive reinforcement to keep going, especially when the task is voluntary and requires one to squeeze out time from daily chores. This is our 150th post and it has been a successful blogging year so far - simply because of nice words we hear from friends and family who follow our blog and numerous others out there who have liked our recipe posts. THANK YOU!!

These cookies were an attempt to show our gratitude towards active followers in the family who keep giving positive feedback on our blog and more importantly, keep trying our recipes. Vidhi, this is for you. Hope you liked it!

Just the perfectly crisp on the outside and soft on the inside chocolate overdose cookies. No one can eat just one!!






Ingredients

1 1/2 cup all purpose flour
1/3 cup unsweetened cocoa powder
1/2 cup roughly chopped dark chocolate
1/2 cup softened butter
1 cup icing sugar
1 tsp vanilla extract
1/2 tsp baking powder
1/2 tsp baking soda
1 egg
1/2 tsp sea salt



Method:

1. Cream butter and sugar together until smooth.. Add the lightly whipped egg to the creamy mixture and mix well. Finally add the vanilla extract to complete the wet mixture.

2. Now assemble the dry ingredients - flour, cocoa powder, baking powder, and baking soda in a separate bowl. 

3. Mix the dry and wet mixtures together to form the nice and shiny cookie dough.

4. Meanwhile, preheat the oven at 175 degrees for 10 mins.

5. Finally, add chocolate chunks and sea salt and roughly mix it with the dough.



6. Use ice cream scooper or a round tablespoon to make perfect round balls. Place them on a baking sheet lined with parchment paper / silver foil (slightly greased) at equal distance.



7. Bake for 11-12 mins at 175 degree celsius to get a perfectly soft cookie. When it comes out of the oven, this is going to be soft and not cookie-like but let it completely cool on a wire rack to get that desired texture - perfectly crisp on the outside and soft and gooey on the inside. Yummm!!

  3. is icing sugar the same as powdered sugar? Just never heard of using in cookies except for shortbread type cookies.

    1. Hi..yes..its the same. You may take granular sugar and pulse it in grinder once before using it.
