Well there are very few Italian dishes which we have not liked, either in Italian restaurants or in Italy. Everything is so full of flavour, well almost. Gnocchi or small balls of dough and potatoes has never really appealed much. But then we found a way to make it yummy!
For starters, we included paneer (or ricotta cheese) in the gnocchi dough and then we pan-fried the freshly made gnocchis to give it that crunch and butterly flavour it really lacked. And then to top it off, we served it a with a zesty and wholesome marinara sauce with oodles of flavours.
If you are bored of the pastas and pizzas and want to venture deep into Italian cuisine, this is what you need to try in your kitchen next! You will love it. We certainly did.
Ingredients (serves 2 -3 )
For Gnocchi
3/4th + 1/4th cup all purpose flour
2 medium sized potatoes
1/2 cup homemade paneer (may use ricotta cheese)
1 tsp olive oil
Salt
Pepper
For the Wholesome Marinara Sauce
4 - 6 plum tomatoes - chopped
2 tbsp tomato puree
1 tbsp tomato ketchup
1 carrot - diced
1 onion - chopped
3-4 cloves of garlic
10 - 12 fresh basil leaves
1 tsp sugar (optional)
Oregano
Chilli flakes
Pepper
Salt
Method
Gnocchi
1. Form a dough of all the ingredients mentioned for gnocchi. Dough should be firm and non sticky.
2. Divide dough into 4 equal sized balls and then roll it into a long rope with a diameter of 2-3 cms.
3. Cut it with a sharp knife at a distance of 1/2 inch each.
4. Press it in center to give shape and use fork to make design on top.
5. In a pot of hot boiling water, add salt. Now add gnocchi to it - avoid crowding. and let it boil for 2-3 mins till gnocchi comes on top.
6. You may complete step 5 for gnocchi in batches to allow proper space for them to cook.
7. Transfer boiled gnocchi in a pot of ice cold water to stop cooking.
8. It is ready to be served with sauce of your choice. However, we lightly toasted our gnocchi in butter till it was golden and crisp, a much recommended step, and what really made us like this dish.
Sauce
1. In a wok, heat olive oil. Sauté garlic and onion till golden brown
.
2. Add diced carrots and cover it with lid for 4-5 mins.
3. Now, add chopped tomato, tomato puree and salt. Let it cook on slow for 7 - 8 mins. Also add the tomato ketchup which will give it the desired sweetness and colour. Taste the sauce and add sugar if required.
4. Turn off the heat, add fresh basil to it and let it cool down. Then, grind it into a coarse sauce.
5. Add oregano, chilli flakes, pepper and adjust salt as per taste.
