Off late, we have been trying to improve our hand at baking. It really is an art. Just the understanding of proportions, temperature, mixing, etc. takes a while to come and takes forever to perfect. We have been improving but there is a long way to go.
And we have kind of devoted a couple of hours on Sunday's to try our hand at baking. Last Sunday, when the weather was relatively nicer, we decided to bake some cookies. We decided to bake something we could actually eat on a daily basis so had to be healthy (relatively !). The research on food blogs led to us baking these oatmeal cookies. And boy,the experiment was really successful. They came out very uniform and just perfectly crispy.
Try baking these little beauties which serve as perfect companions to a glass of cold milk.
Ingredients
1 cup all purpose flour
1 cup instant oats
1/2 cup white sugar
1/4 cup brown sugar
1/2 cup butter
2 eggs
1/2 tsp salt
11/2 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1/4 tsp nutmeg
Ingredients
1. In a grinder, pulse both the types of sugar together into a smooth paste.
2. Melt the butter and let it cool down. Mix it with sugar to combine them uniformly.
3. In the same dish, add the eggs one by one, mixing the batter well. Occasionally scrape sides to make a uniform mix.
4. Add flour, oats, cinnamon, nutmeg, baking powder, baking soda, abd salt to the mix above and stir well to form a tight but not too dense cookie dough.
5. On a baking tray, add parchment paper / aluminium foil and grease it slightly. Using an ice-cream scooper or a table spoon, place cookie dough circles at a distance of at least 2 inches.
6. Now pre heat the oven at 200 degrees for 5 mins and then bake your first batch of cookies for 15 - 18 mins at 200 degrees (duration will depend on your oven as well as how crisp you like your cookies).
7. Let it completely cool on a wire rack for 10 mins. You may cheat and try a warm one, we know its hard to resist sometimes.
