2013 has been a remarkable year. We will recall this as the year when we accomplished our long-standing dream of going on a Eurotrip together. We had the opportunity to go separately on exchange programs while doing our MBAs but always wanted to do it together. This summer, we spent three weeks in Europe visiting around 10 cities across 6 countries, seeing breathtaking places and devouring on awesome food. From the gelatos to the unique dishes of each region. It was a blast! And to top it off, we just concluded a one week trip with family to Rajasthan. It contrasted from our earlier trip given the relaxed pace and the company of family. It was also an year of professional accomplishments and we were able to balance "work" and "life" pretty well. So far so good !!
But what will also be recalled about this year is that we got really serious about cooking and in turn our food blog. We posted 65 blogs including several recipes we cooked and ate for the first time. This was a significant increase from our previous year when we had just barely started. We clocked around 30,000 views on the blog and the best part is that the pace is increasing. We would hope to keep the acceleration going and try and post more of our unique yet healthy recipes in 2014 ! Keep reading and motivating us ! Now to end the year with a bang - A sinful concoction called Eggnog Truffles
We have since long been wanting to cook chocolate truffles at home given how simple the recipe seems. As we were researching for that, we came across this rather unique recipe that we thought of adopting to our tastes. We noticed that a l
ot of people used white chocolate for this, but we decided to do it the traditional way. Eggnog is holiday drink spiced with nutmeg and intoxicated with rum/brandy and we converted it into cute little balls!! It's an interesting recipe and the outcome is surprisingly delightful.
Ingredients
12 egg yolks (you may watch this video to learn how to separate whites from the yolks)
1/2 cup sugar
1/4 tsp nutmeg powder
1 tsp cognac/brandy/rum
1/2 tsp vanilla essence
For dusting
1/4 tsp cinnamon powder
2 tbsp powdered sugar
Method
1. Set up a heat proof glass bowl over a pot of simmering water. This will be our cooking apparatus for the next several minutes.
2. Pour in all the ingredients and mix well
3. Now this is where your patience and perseverance will be tested a bit, but hang on, this will surely be a happy ending (!). Keep cooking and stirring this mixture for about 30 - 45 minutes (depending on your apparatus) till the mixture really solidifies and become glossy. A good test is when it gets stuck to the spoon you are using for stirring. Try not to taste and let the surprise build up. Though we know you would, we certainly did.
4. Once the mixture solidifies, let it get to room temperature. Should take about 30 minutes to do so.
5. Now with slightly buttered hands take the mixture and roll it into 3/4 inch balls.
6. Roll the balls in the dusting mix
The custard like flavours spiced with cinnamon and nutmeg and intoxicated with cognac are just too hard to resist.
Forget the calories and indulge !!
