We simply love Mexican cuisine for its burst of flavours. The only downside being that If you make it the traditional way, it tends to be very heavy given the extensive use of cheddar cheese and sour cream. However, if you take out these two ingredients from the recipes, you don't necessarily take away the flavours.
So here we were again - attempting to make a healthy vegetarian Mexican recipe, in the midst of north Indian summers. What better way to do it, than utilize the abundance of yummy mangoes.
This is a vegetarian version using soya granules, but one can substitute that with chicken/beef as well.
Ingredients
Taco shells: 4
For soya filling
- Soya granules: 1/2 cup
- Taco seasoning mix: a 2 Tbsp mixture in rough proportions of cumin powder, onion
powder, garlic powder, smoked paprika, oregano, salt, and pepper
- Brown sugar: 1tsp
For mango salsa
- Mango: 1/2 cup, finely chopped
- Onions: 1/4 cup, finely chopped
- JalapeƱos: 5-6 slices, finely chopped
- Lemon juice: 1 Tbsp (you can adjust as per your palate)
- Coriander
- Salt and pepper
Method
1. Prepare the mango salsa - mix all the ingredients gently and adjust lemon, salt, and pepper as per taste
2. For the soya filling, soak the soya granules in water for about 30 minutes. Before using squeeze the water from the granules
3. In a pan, take a spoon of olive oil and add the soaked and squeezed granules. Add the taco seasoning and the brown sugar. Brown sugar is needed to adjust for the saltiness of soya granules
4. Before assembling, bake the taco shells in oven for about 5 minutes (or as per instructions on the package)
5. Assemble the tacos - fill half the tacos with cooked soya mixture and add the mango salsa. The savoury soya mixture goes very well with the sweet and tangy mango salsa.
