Egyptian Koshary

Its been over 6 months now but the flavour of Egyptian cuisine is still so fresh in our memories. The breads, the falafels which we cooked recently - All Yummmmm…Going over pictures of our last vacation, we decided to cook Egyptian Koshary for dinner the other day.

It’s a simple recipe very similar to our Black daal and rice but with slight modification. So, here you go..
Ingredients

1 Chicken breast (cut in small pieces)
1 cup Black Masoor Lentil – Salted and Boiled
5 Plum Tomatoes – grind into Puree
½ box Tomato puree
2 onions finely chopped
1 onion cut in rings
4 cloves of Garlic
2 cups Boiled Rice (~1/2 cup rice)
1 cup Elbow Macroni  / Thin Pasta – Boiled
2 tsp Cumin powder
Salt
Black Pepper
Red Chilly Powder
Oregano
Olive oil 

Method

1. Caramelize Onions by sautéing in a pan for about 10 minutes in mid-high heat
Prepare Hot Sauce
2. Heat oil in pan and add garlic to it. Then add chopped onions. Saute till golden brown
3. Add Tomato Puree to it
4. Add Cumin powder, salt , pepper and chilly powder as per taste

Prepare Chicken
5. Marinate chicken in salt and lemon Juice for 30 mins
6. Cook it on pan with ½ spoon oil and add garlic salt, pepper and Oregano

Assemble
7. Put a layer of boiled rice in a bowl
8. Add Macaroni / pasta over it
9. Add boiled lentils
10. Cover it with prepared Tomato sauce
11. Top it with Chicken
12. Finally, load it with caramelized Onion rings. Phew !

Serve hot.
