Berrylicious Whole-wheat Pancakes

Happiness is cooking food for kiddos. Even more happiness is seeing them eat and relish the food you have cooked. However, that is something which is hard to predict and plan for given how moody kids are these days (or maybe even we were at our age!!). Not thinking to far ahead, we decided to cook pancakes for breakfast  when nephews and niece came for home-stay this summer. And with their moms keeping a close watch on what we are giving them to eat, we decided to make them healthy yet obviously attractive for the kids!

We made pancakes with whole-wheat flour, and when loaded with chocolate sauce or maple syrup, they made for a yum breakfast. 





Ingredients

2 cups whole-wheat flour
2 tsp. baking powder
1 1/2 tsp. baking soda
1/2 teaspoon salt

1 tbsp vanilla essence
2 tablespoon honey (less if you are making it for adults)
2 eggs, lightly beaten
1 3/4 cups milk
2 Tbsp. vegetable oil

1/4 cup dried berries

Method

1. Mix all the dry ingredients well so it becomes a uniform mixture.

2. Lightly beat two eggs and add the other liquid ingredients to it. Mix well again.

3. Add the liquid mixture to the dry ingredients and mix well to form a uniform paste. 

4. Now add the dried berries and mix well again. Adjust the quantity of milk to get the right consistency. It should not be very thin as the pancakes would not become fluffy then. Just enough to make it possible to pour into a pan.


5. Heat a pan and melt 1 tsp butter on it. Adjust the temperature to low-med and don't let the butter burn.

6. Pour the mixture from a big ladle till it forms a circle with 6 inch diameter. Let it cook for about 5 - 10 min on low heat. Cooking on low heat would allow the pancakes to cook evenly and not remain undercoooked in the middle


7. Once bubbles start to form on the top, flip the pancake and cook again for 5-10 min. Don't worry if the flipping is not very clean. This is fun food and not meant to be perfect.


8. Serve the pancakes loaded with powdered sugar, maple syrup or chocolate sauce. Add fresh berries if you have some readily available.
