The Food-truck Patty Melt

For the past one year or so we had started eating very healthy on weekdays and even on most meals on the weekends. The target was a trip to Europe, where we wanted to be in shape, for pics, but also to be fit for all the walking and travelling needed. 

And just after the trip, we prepared something we wanted to for so long. It is drooling, cheesy, buttery - Patty Melts. These things are popular across Food Trucks in US, and we just had to make our own version.
Ingredients 
Serving -1. A full portion is a big meal and sharing with someone will make a great breakfast :)

2 Slices of bread
1 onion (thinly cut slices)
1 cheese slice
3-4 thinly cut slices of mozzarella cheese
1.5 Tbsp butter (aha!)

For the patty
125gm minced chicken (The original recipe calls for beef but we don't eat it so replaced with chicken. Vegetarians can even replace this with a mixture of potatoes and paneer)
1 tsp - Worcestershire sauce (optional)
A dash of tobasco or hot sauce
Salt and freshly ground black pepper

Method

1. Prepare the patty. Mix all the ingredients and set aside in the shape you prefer for about 10 - 15 minutes

2. Caramelize the onions. Use 1/2 Tbsp butter to saute onions on low-medium flame for about 10 minutes till they turn nicely golden and brown
3. In the same pan, put the patty and cook only till the meat goes opaque (~10 min on medium heat). Don't overcook, else it will loose all its juices
4. Now start the good stuff. Add 1 tbsp of butter and put one bread slice to evenly coat. 
5. Make the assembly - add the mozzerralla cheese - Patty - Onions - Cheese Slice - Bread Slice
6. Flip carefully to cook the other bread slice. Cut into two and serve the indulgence immediately, while the cheese is gooey.
