In our sandwich trilogy, we've been trying to use different breads to create distinctive recipes. We started with a typical submarine and then used a simple brown bread. For the third version of the trilogy, we decided to use a soft bagel.
The stuffing for this version - a simple chicken salad - is something that is found a lot in cold sandwiches as well as typical grilled versions found in numerous bakeries.
Ingredients
Soft bagel - 1
Boneless chicken - 200gms, cut in medium pieces
Onion - 1 small, finely chopped
Lemon juice - 1tsp
Mayonaisse - 1tbsp
Dry basil - 1/2 tsp
Oregano - 1/2 tsp
Salt and Pepper
Method
1. Marinate the chicken in lemon juice and a pinch of salt for about 30 minutes
2. Cook the chicken in a pan with a bit of oil on high heat. To ensure the chicken remains soft, do not cook for more than 5-7 minutes. Keep the chicken aside and shred in small pieces
3. Sauté the onions for about 5 minutes till they are soft and then take off in a bowl. They should remain a little crunchy
4. Combine the ingredients - shredded chicken, onions, mayo and the herbs to make the chicken salad
5. Arrange in the lightly oven-toasted bagel
