Masala French Toast Sandwich

Sunday brunches are "in" all seasons. Be it cold winters when ones appetite is increased or scorching summers when it reduces the number of trips to the kitchen. And eggs are part of a lot of brunches and so is bread. So with that simple inspiration we made these India-styled "french" toasts and converted that to a full meal by making sandwiches out of it. Yum and Wholesome.




Ingredients

For french toast
4 Bread slices - choose brown bread or multi-grain
3 eggs
Salt and black pepper to taste
1/4 tsp garam masala

For filling
1/2 cup grated cottage cheese
1/2 cup chopped mushrooms
1 tbsp chopped ginger
1 finely chopped chilies
Salt
Freshly crackled black pepper

Method

For Filling
1. Sautee ginger, chillies, mushrooms and cottage cheese in a pan with butter

2. Add salt and pepper as per taste

3. Keep the mixture aside


For toast and sandwich

1. Whisk eggs in a large bowl and add all the ingredients to it

2. Now, take 1 slice and dip it in egg mix and cook it in a non stick pan with little butter.

3. Cook from both sides to prepare the toasts for the sandwich. Keep the slices on the pan itself

4. Add the mixture on top of one the slices. Top the sandwich with the other slice and let it be on the pan for a few minutes on low heat


5.Press gently so the sandwich holds together


Serve as it is or slice in triangles. Plain old ketchup would do wonders with this. Enjoy!
