Life is all about finding balances I feel. The balance of excellence in profession and time with loved ones. The balance of looking good / staying feed and satisfying food cravings - oh, such a challenge. We have recently found a happy medium - no carb dinners. Here's a dish in the quest for finding that balance of minimal carbs, healthy protein and lots of flavor!
Ingredients
1/2 kg minced chicken (we prefer buying boneless chicken breast/thighs and mincing at home - that way we know what we are eating)
Cheddar cheese - cut in 1cm cuboids
1 egg
3-4 cloves of garlic minced
1/2 tsp mustard powder (optional)
1/2 tsp black pepper
1/2 tsp white pepper
1/2 tsp oregano
1 tsp salt (adjust to taste)
1/4 cup milk
1/2 cup bread crumbs
1 tsp dried parsley - crushed
Method
1. In a bowl mix all ingredients and make a uniform mixture.
2. Grease your hands and use ice cream scooper to make uniform balls. What you need to do is stuff half the scoop with chicken mince, then add the cheese cube in the middle and then fill rest of the mince on top. Roll with oiled hands to get the right round shape
3. Prepare all the meatballs and line on a baking tray with aluminium foil / parchment paper
4. Pre heat the oven at 200 degrees and then bake for 15 mins and then for 5 mins at 220 degrees to get that nice brown outer layer.
Sprinkle with parmesan cheese and serve hot with any sauce! Cheesy Center - bliss
