We learnt about Zoodles a while back but were always skeptical of making them. We were deliberating how can 'Z'ucchini cut in the shape of N'oodles' can provide that texture which you desire in Noodles or Pasta type recipes. But we were swayed by the health quotient of the dish, it being zero-carb made for a perfect weeknight dinner. We added some chicken breast to add protein that the dish lacked. Simple, healthy and delish!
Ingredients
1 zucchini
3 tsp pesto sauce
1 piece garlic, finely chopped
1 cup cherry tomatoes
1 chicken breast (optional)
1 tsp grated parmesan cheese
1 onion, finely chopped
1/4 cup any small nuts like pumpkin seeds or pine nuts
1/2 tsp
Salt and black pepper to taste
Method
1. Make the zoodles - there are a number of ways they can be made but the easiest is to use a good peeler and peel flat noodle shaped pieces including the skin. Keep peeling the zucchini till the seeds start to show
2. Marinate the chicken breasts in salt, pepper, parmesan cheese and some Italian seasoning mix
3. Pre-heat an oven to full temperature. Bake the chicken breasts and half-cut cherry tomatoes together for about 7-8 minutes
3. In a pan, take olive oil and saute the garlic and onions together for about 5 minutes
4. Add the zoodles and cook for another 5 minutes on high-flame
5. Add the pesto sauce and turn off the gas. Just mix the zoodles well with the pesto sauce
6. Serve the zoodles with the grilled chicken breast and oozy cherry tomatoes
