Ferrero Rocher Cake

There is something inherently cute and happy about birthdays and cakes. One doesn't really go without the other. N had to make a special (read: decadent) birthday cake for a friend and decided to borrow the idea of a Ferroro Rocher inspired cake. It turned out to be truly special! One of our favorite recipes now - not really a typical cake but a mix of a brownie cookie cake delight.

Ingredients

2/3 cup butter
1/3 cup (55-60 gms) dark chocolate
3/4 cup brown sugar
2/3 cup all purpose flour
1/4 cup cocoa powder
1/4 tsp salt
2 eggs
1/4 cup crushed hazelnuts
40 gms hazelnut wafers
1/2 jar of Nutella
1/4 cup whole hazelnut
1/4 cup roughly chopped hazelnut
6 Ferrero Rocher chocolates

Method

1. In a bowl, add butter and chocolate and heat in microwave for 1 min. Use a spatula to mix it.

2. Now add brown sugar and whip it. Add egg one by one and whisk till it forms a uniform mix. You may use a grinder for this step.

3. Add flour, salt, cocoa powder to the bowl and mix it well.

4. Add crushed hazelnuts to the batter.

5. Now take a skillet or a pie mould, grease it and dust it with flour. Pour half batter into the mould. Spread Nutella on the batter generously

6. Layer it with chopped waffers and hazelnut.

7. Pour the remaining batter

8. Bake it for 25- 30 mins for a gooey brownie/cake in a pre heated oven at 175 degrees.

9. Let it be inside oven for 10 mins after baking has stopped and then 10 mins after taking out.

10. Top it with crushed hazelnuts and halved ferrero rocher balls

Dig in!
