As you travel and read up on the Indian street food scene, you begin to realize there is so much more than generally meets the eye. Mumbai, e.g., is not only known for its paani puri and pav bhaji but also the famous Bombay Sandwich, Parsi food and this - the tawa rice. A very simple veggie fried rice with the spark of Pav Bhaji masala and lemon juice. Perfect breakfast food!
Ingredients
1 cup boiled rice
1 finely chopped onion
1/4 cup finely chopped capsicum (~1/2 capscium)
1/4 cup finely chopped carrots (1 carrot)
1/4 cup finely chopped beans (10-15 french beans)
1 finely chopped tomato
1 tsp pav bhaji masala
1 tsp lemon juice
1 tsp ginger garlic paste
Salt and Pepper to Taste
Coriander for garnishing
Method
A really basic method this.
1. In a frying pan, take some oil and cook the onions along with the ginger garlic paste.
2. Once the onion is slightly brown, add the capsicum, carrots and beans and cook for another 5 minutes
3. Add the tomatoes and cook till the veggies are soft.
4. Now add the masala, salt and pepper and cook to combine well. Another 5-10 minutes.
5. Finally add the rice, take the pan off heat and mix well. Along with this also add the lemon juice and mix well.
6. Serve it with chopped coriander.
