Lemon Butter Fish

We have been going crazy cooking fish fillets ever since we realized that they are so easy to handle, relatively affordable, easily available, and really healthy. Not to mention, lipsmacking-ly yummy!!

Alright, so the name of this dish really should be "Lemon Butter Garlic Fish served on a bed of Orange Flavored Greens". However, the preparation time is probably much smaller than the length of the name.


Ingredients

For Fish Marination: All Ingredients according to taste, enough to cover the fish fillets completely


Olive oil
Sea/Kosher Salt
Lemon Zest
Fresh Lemon Juice
Grated Ginger and Garlic
Freshly Ground Black Pepper

For the Side Dish
Garden Vegetables: Bell peppers, spring onions, button mushrooms, baby corns: 2 Cups
Olive Oil: 1 Tbsp
Lemon Juice: 1 Tsp
Orange Juice: 1 Tbsp
Paprika: Optional
Brown Sugar: 1/2 Tsp
Sea salt and Black Pepper

Method



To prepare marinade for Basa Fish Fillet, mix it in olive oil, sea salt, fresh lemon juice, lots of lemon zest, grated ginger and garlic and freshly ground Black Pepper. Leave it for an hour. Coat it with a sprinkle of flour (very lil)  and then bake it in pre heated oven at 200 degrees for 10 mins ( or until done)

Yes, this is very easy. Key to its flavors is use all fresh ingredients.

For the side dish

Coat the vegetables with Olive oil, sea salt, brown sugar, Oregano, Black Pepper, Paprika, and 1 table spoon of fresh Sweet Lime / Orange and 1 teaspoon of lemon juice. Grill it in oven for 15 – 20 mins, with all the juice in the tray.
