The Devilled Eggs!

Traditionalists would never approve meddling with comfort food like boiled eggs. However, we never adhere to such beliefs, and keep trying to turn things inside-out ! See below...



Ingredients
Eggs -5
Spring Onions – 1 (stem, finely chopped)
Jalapenos - 5-7 (finely chopped)
Mustard Sauce – 1 tsp
Mayo – ½ tsp (optional)
Smoked Paprika – ½ tsp for mixture + ½ tsp for garnish
Tobasco – 3-4 drops (optional)
Freshly Ground Black Pepper
Salt

Method
1. Hard boil the eggs and peel the outer layer.
2. Cut the eggs in halves. Scoop out the yolks from all the eggs gently using a fork, and add to a container. 
3. To half of the collected yolk (you may choose to throw the other half or use later), add all the ingredients and mix to form a coarse but even paste
4. Add the mixture back to the emptied eggs. By now the mixture would have added volume and would fill all the eggs. If you are the artistic types, you can use a pastry bag to add back the mixture 
5. Sprinkle paprika and serve at room temperature

These babies go great with soups or salads, and complete a healthy meal! We use the standard recipe found everywhere, but added finely chopped jalapenos to add a zing.

Make them without Mayo, and they are healthier than normal boiled eggs. Did we say healthier? Eggjactely!
