Peanut Butter Cookies

The December-end holiday period is as much about unwinding from work as it is about giving gifts to family, friends or colleagues who have meant something to you in the course of the year.And we believe home-baked cookies are an excellent way to thank someone and show appreciation. This is exactly what we did a while back when N baked these delicious peanut butter cookies for her colleague at work. 

Try'em. Its true love !





Ingredients (12-14 cookies)

1/2 cup unsalted butter 
1/2 cup icing sugar 
3/8 cup brown sugar 
1 Egg at room temperature 
1 tsp vanilla extract 
1/2 cup peanut butter 
1 1/2 cup +1 tbsp all purpose flour
1/2 tsp baking soda
1/2 tsp baking powder 
1/4 tsp salt
20 honey coated peanuts - roughly crushed 

Method 

1. In a grinder pulse sugars together into fine powder. Then add softened unsalted butter and grind till forms a smooth paste 

2. Add whipped egg to grinder and pulse for 2 mins

3. Now add vanilla extract and peanut butter to it. Scrape sides and grind to form uniform mixture.

4. In a large bowl,combine  flour, baking powder, baking soda and salt.

5. Now mix wet ingredients with dry until it forms a smooth cookie batter.



6. You may refrigerate this dough upto 3 hrs

7. Pre-heat oven for 10 mins at 180 degrees centigrade

8. Using scoop, shape cookies of same size and lay down on baking sheet.



9. Bake for 11 mins at 180 degrees centigrade. The cookies may look a little underdone when they come out but will harden as they cool. 



Let it cool and cookies are ready to serve. You may want to microwave for about 15 sec before serving
