We have always been willing to tweak the normal / traditional recipes a little and make something new. However, pizza was one such thing which we did not want to tweak too much. Its probably the most universally liked dish in the world and why would you ever want to tweak such a thing. But what if you could do a small twist and create something really interesting? The prospect was enticing and we discovered a new favourite. We never knew that Pizza can taste yum without tomato based sauce also..Presenting a dish getting increasingly popular - Pesto Pizza.
The way we made it even more interesting is by using fresh mozzarella which is typically what is used to make the divine margherita pizza (in the traditional Italian way and not what Dominos serves). This cheese just looks like cottage cheese but has such a wonderful flavour and melts like any other cheese. Such a delight !!

Ingredients (makes 2 thin crust pizza - Dia size 10 inches approx.)
For Dough
3/4th cup all purpose flour
1/4th cup wheat flour (atta)
1 packet of active dry yeast
1 tbsp Olive oil
1 tbsp Honey
½ tsp salt
For Pizza assembly
Basil Pesto Sauce - 3tbsp
Fresh Mozzarella - 200gm
Thinly sliced tomatoes
Olive oil
Method
1. Prepare the dough and knead it for atleast 5 mins to make it soft.
2. Leave it for 2 hours and then knead it again and let it rise for another 1 – 2 hrs.
3. Divide the dough into 2 parts and roll them into flat base
4. Apply olive oil on the pan and transfer the dough on pan
5. You can use pesto or pizza sauce on the base. We used Pesto here
6. Here come the yummiest part, cut fresh mozzarella (you may use normal pizza cheese) and place the chunks on the pizza
7. Put thin slices of tomato
8. Bake it in over for 10 mins at 250 degrees with both heating element on.
