Peach Frozen Yogurt

Most of what we are cooking these days is to beat the heat. Seems to be the only thing that is cheering us up in this weather. OK, enough of the whining, let's talk about this lovely dessert.

We had always wanted to do something with the lovely peaches available in market this summer. It really is a wonderful fruit. Sweet but well-balanced and flavourful. We thought it would go really well in a frozen yogurt. Yogurts are much healthier than ice creams and also, probably more importantly sometimes, much easier to make as well. Follow this simple recipe to bring some delight to this summer.






Ingredients

7- 8 ripened peaches
5 tbsp maple syrup / honey
1 cup hung curd
1/2 cup water
1 tbsp vanilla extract



Method:

1. Hang the yogurt overnight in a muslin cloth to remove all the moisture.



2. Prepare two pots of boiling water and ice cold water. Dip peaches in hot water for 30 seconds and then in cold water. This will help to remove the peel easily.



3. Now, chop peaches into small pieces and cook it in a pan with 1/2 cup water and maple syrup or honey.



4. Cover it with a lid and cook on low heat for 5 mins and then remove the lid and cook on "high" till water evaporated.

5. Now, let it cool down and then keep it in freezer for at least 2 hours.

6. Grind peaches and then add yoghurt to the grinder. Mix well so it forms a uniform mixture.

Optional - You may add bits of peaches to add more texture to the yogurt.

7. Freeze it in a vacuum tight container, preferably overnight.

Slurrp a scoop after every hour to beat the heat!
