This is our all time favorite and the very definition of comfort food. Very regularly we go back to this dish when you are getting bored of the lentils and veggies at home. A wonderful backup option which can be prepared rather quickly. Notice the steps here to make a uniform crumbly egg bhurji.
Ingredients (serves 2 - 3)
4 eggs
2 onions chopped
1 tomato chopped
2-3 green chillies - finely chopped
1 inch piece of ginger finely chopped
2 tbsp milk
1/2 cup fresh coriander roughly chopped
1/4 tsp garam masala
1/4 tsp red chilli powder
1/2 tsp freshly crackled black pepper
Butter and oil
Salt
Method
1. In a pan, add butter + oil (to avoid the butter burning) and saute onion, chillies and ginger together till the onions are slightly soft.
2. Add tomatoes to it and cook for 2-3 mins.
3. In a separate bowl, beat eggs. Add salt and garam masala to it.
4. Now add milk to pan and lower the flame to medium-high.
5. Add eggs to pan and stir constantly to not let it make big chunks. This is the important step to make sure the egg bhurji is uniform in consistency and has that moist yet cooked texture. Add the chopped coriander as you are stirring the mixture.
Serve hot with tawa parantha!
