Ok, we have a sort of confession to make - we do some cheating when it comes to cooking Thai food. It's probably the reason why we haven't posted any Thai recipe as yet although we love the cuisine. As hardcore foodies, we are mostly inclined to do the entire cooking by ourselves, i.e. not use the ready-to-use sauces or pre-mixed spices. Very rarely do you get the right flavour by using such sauces and its better to use core ingredients that go into making of those mixes. However, when it comes to Thai food, we have seen that using these sauces/mixes really simplifies the process and makes it much more doable. After all, a little cheating should be allowed for a good cause :)
For this great winter soup, we have used Real Thai's Tom Yum paste. However, we did not restrict ourselves to just the paste and used some "original" ingredients like lemon grass and lemon zest to complete the recipe. This soup will just open your nose and throat, and will provide comfort required on a cold winter night.

Ingredients (serves 2-3)
2 tsp Tom Yum Paste - see, we only used a little :)
2 plum tomatoes – diced
1 spring onion – sliced thinly
5-6 dried mushrooms / button mushrooms
A few strands of thinly sliced ginger (the original recipe calls for galangal, but giner works as well)
1 litre veg / chicken stock (or stock cubes mixed in 1L water)
1 tbsp chopped coriander
1 freshly squeezed lemon
½ tsp lemon zest
½ tbsp fresh lemon grass chopped OR 10 – 12 strands of dried lemon Grass boiled in ½ cup water
1/4 chicken breast – thinly cut and marinated in salt and lemon juice
2-3 kaffir lime leaves (optional)

Method
1. In a large pot, heat stock and add tomatoes, spring onion, mushrooms, ginger.
2. Add Tom Yum Paste, Lemon Grass (or strained lemon grass water in case of dry lemon grass)
3. Add Lemon zest, lemon juice, Kaffir lime leaves and salt as per taste. Add only a little salt as stock would also be containing it.
4. Add marinated chicken in end to keep it soft. It will cook immediately in boiling soup
Garnish with coriander and serve piping hot!
