Broccoli Almond Soup

Winters bring with it a wonderful supply of broccoli, and we make this soup a lot to take best advantage of this nutritious vegetable. This nutty soup is flavoured with a twist - white wine. If you don't consume alcohol, you can make it without the wine as well and it will taste good. But the wine, of course, takes it a to a new level.

Ingredients

2 big broccoli – florets and stem both
1 medium onion – chopped
2 cloves of garlic
10 blanched almonds + 4-5 more cut in flakes and toasted (for garnishing)
1/3 cup of dry white wine (optional but it tastes really good with it)
½ cup milk
1 tsp cornstarch
½ litre veg stock
Butter / Olive oil

Method

1. In a pan, heat butter and sauté garlic and onions

2. Then add broccoli to the pan and add wine to it

3. After broccoli absorbs wine, add veg stalk and almonds to it

4. Let it cook in boiling stock for 10 min

5. Cool down the mix and grind it in mixer. Transfer it again to pan from mixer

6. Add cornstarch after dissolving in milk to achieve the desired consistency

7. Add salt and black pepper to adjust the taste



Garnish with toasted almonds and serve hot!
