Mexican Scrambled Eggs (Migas)

Recently we have been experimenting with egg based breakfasts that are not your usual boiled eggs or omelettes. We started this year with the very successful Egg-white Frittata and wanted to try more of such recipes. It has also been a few months since we have posted any new Mexican recipes. So, we both of these ideas in our heads, we started searching for a morning egg based Mexican breakfast and it was a simple search - we found Migas !!

Migas are scrambled eggs which are made with many Mexican style veggies, meats, spices and related stuff. We chose to make a simple non-meat version using tortilla strips to add some crunch. It's flavourful, colourful and just a wonderful breakfast!


Ingredients

4 eggs (whisked with 1 tsp of water)
2 corn tortillas, cut in 1/2 inch strips
1 tomato, chopped finely
1 small onion, chopped finely
1/2 cup chopped red and yellow bell peppers
1 tbsp chopped jalapeƱos
3 tsp butter
Salt and white pepper
A bit of cilantro

Method

1. Make the crispy tortilla strips: Shallow fry the tortilla strips in 1 tsp butter and keep aside


2. Saute the onions and peppers in the remaining butter till they are soft but still a little crips. Probably just for about 5 minutes. At this point you can add the salt and white pepper.

3. Add the whisked eggs to the pan, lower the heat and cook for another 5 minutes. 


4. Add the tortilla strips, tomatoes and jalapeƱos and cook for another 2 minutes.

5. Take it off the heat and add the chopped cilantro.


Amigos - Serve fresh with a bit of salsa!!
