Vegan Burger

There are a few things you always crave, every few days. Among the top few on that list is a loaded burger. There is just something about the combination of a thick juicy patty sandwiched between light and fluffy buns that pretty much everyone in the world drools over. It is one dish that transcends geographies! 

However, there is a rather unhealthy image that is tagged to this dish and justifiably so. Most of the stuff available in fast food chains has deep fried and greasy patties made of meat / potatoes and then is loaded with cheese. Of course, we were not going to do any of that in our kitchen.

We made the patty using healthy and nutritional oats, tofu and soya granules. We used no cheese and used whole wheat buns as well. The only indulgence we had was using a delectable sauce made of egg-less mayo and sriracha hot sauce

Trust us to convert an unhealthy snack into a wholesome breakfast!



Ingredients

4 whole wheat buns
200 gm tofu. You may also use cottage cheese / paneer 
1 cup soya granules, soaked in 2 cups water for 5 minutes
1 cup oats
1 or 1 1/2  slice wheat bread
1 cup red and yellow bell peppers, juliennes
1 onion, thinly sliced
2 tbsp egg-less mayo
1 tbsp sriracha hot sauce. Any other hot sauce will work as well
Garlic powder
Herb mixture - oregano, parsley, etc.
Salt and pepper

Method

Grill the peppers and onions

1. Toss the peppers and onions in 1 tsp olive oil and a mixture of garlic powder, herbs, salt and pepper.

2. Grill in an oven at 200 centigrade for 10 minutes



Make the patty

1. Squeeze all the water from the soya granules

2. Lightly toast the oats in a pan for about 5 minutes

3. Crumble the bread slice and the tofu. You may have to increase the quantity of bread if the mixture does not combine well

4. Mix all the ingredients together with the garlic powder, herbs mixture and salt and pepper to taste. 



5. Combine well to form a uniform mixutre

6. Divide into 4 patties wit 1/2 inch thickness and diameter based on the size of the burger buns



7. Shallow fry the patties in a pan for about 10 - 15 minutes on medium flame. You need to cook these longer because the nutri and oats need to cook for a bit. 

Make the burger sauce

Simple - combine the egg-less mayo and the sriracha sauce. This hot sauce has been making foodies crazy the world over and we eventually got our hands on this recently. However, any hot sauce or sweet chilli sauce would work here



Assemble

1. Place the patty on a slightly toasted burger bun bottom

2. Add the grilled peppers and onion

3. Pour the burger sauce on top and cover with the burger bun.

Try to resist!!!
