Chicken Lucy Burger

What's the best thing to have happened to the fast-food scene in India? It is definitely the new range of "Dunkin' Donuts" burgers. They are somewhat of a hybrid between gourmet and fast-food and are definitely not cheap but we are not complaining. They are a real delight and that is the real inspiration behind this sinful cheesy indulgence. This is such a contrast from the healthy vegan burger we made last on our blog but goes well in these eat-anything-to-cheer-up gloomy winters.

We made these mexican styled and the patty was stuffed with cheese. Need we say more?

Ingredients (makes 2 big Patties)

For patty
200 gms minced chicken (we recommended getting boneless chicken breast and mincing it in a blender - this makes sure one is only getting good quality chicken)
1 onion chopped
3-4 cloves of garlic minced
2 tbsp bread crumbs
1/2 tsp paprika
1 tsp cumin powder
1/2 tsp oregano
1/4 tsp chilli flakes
1/4 tsp dried garlic powder
Salt
2 cheese cubes / slices

For dressing
1 cup mix of roughly chopped bell peppers and onion
2 tsp salsa sauce

2 tsp Mayonnaise
2 ready to eat burger buns

Method

Make burger patties 1. In a pan, heat oil and saute onion and garlic.

2. In a bowl, mix onion and garlic along with minced chicken. Add bread crumbs to it and all the spices and mix it well.

3. Divide the dough into 2 halves and make nice thick patties. Stuff cheese in the middle of the patty.

4. Let it refrigerate for 20 - 30 mins.

5. Heat the patty on low heat and by covering the dish for at least 15 minutes. Because we are making thick patties, need to make sure the chicken cooks from inside and hence need to cook for long. Of course, would best to grill them if you have that option

Make the dressing6. Meanwhile, in a pan, saute onion and bell pepper mix by covering it with lid. Add salsa sauce to the mix and let it cook till it becomes very dry.

Assemble

1. Toast buns on a pan.

2. Place the cooked patty on the lower bun and top it with 1 tsp mayonnaise

2. Top it with the bell peppers and salsa topping and then the top bun to complete the assembly

You don't simply eat these things. You devour them with ketchup ! Slurrrp
