Stuffed Pizza Buns

These Delhi winters have been quite chilly this year. We have had several days without Sun and are now used to foggy mornings pretty much everyday. Only a few things bring you cheer in this weather - freshly baked oven delights is probably on top of that list. Though baking is usually associated with desserts, we were reminded of our "Pigs in a Blanket" recipe and wanted to use the dough recipe from there to make something interesting.

We made stuffed buns and they were just fantastic. The really soft dough gave that airy feel and the veggies and cheese filling is always a wonderful combination. Try your own versions of fillings like pesto chicken or desi keema and make your own buns. Just remember one thing - serve them freshly baked!




Ingredients (8 medium size buns)

For Dough
2 cups all purpose flour
½ tsp salt
1 tbsp milk powder
3/4 cup warm milk 

1 ½ tbsp sugar 
1 ¼ tsp active dry yeast 
1 egg white
25 gms butter 

1 egg white 
1 tbsp water
1 tsp White sesame seeds for sprinkling
For Filling
1 onion chopped
1 capsicum chopped
1 packet button mushroom chopped
4-5 baby corn chopped
2 cloves of garlic minced
2 spoons of ready to use pizza sauce
Grated Mozzarella cheese
Salt
Pepper
Oregano
Method


To prepare the dough

1. Mix flour, salt and milk powder

2. In a separate bowl, mix sugar, warm milk and yeast and let it rest for 5 - 8 mins

3. Mix yeast mixture with flour mixture and add egg white

4. Heat the butter and add to the dough in 3 parts while continuing to mix and start making the dough

5. Take out the dough on a lightly floured surface / a large flour pan and keep kneading with the heel of your hands for 10-12 minutes. (This step is the key to success)

6. Transfer the dough to slightly oiled bowl and cover it with a moist cloth. Let it rise for at least 2 - 4 hours in a warm place.


7. Divide dough into similar sized balls

To prepare filling

1. In a pan, heat oil. Sautee garlic and onion.

2. Then add capsicum, mushroom and babycorn and sautee till soft.


3. Mix pizza sauce generously in the filling.
To assemble

1. Roll balls into small circles and add 1 tsp of filling inside and cheese



2. Leave these stuffed balls in an oiled baking tray and let it rise for another 30 mins.



3. Before baking, use brush to wash it with egg white and sprinkle with white sesame seeds.

4. Bake it at 200 degree centigrade for 10-12 minutes till the buns just start to brown. Don't over bake or they will harden/burn. Also of course, remember to pre-heat the oven
