Vanilla tea cake

You must agree that making cakes is a very fine art. And we are talking about a good cake - perfectly baked, with the right sweetness and texture. Forget the layerings and the add-ons, the basic sponge needs to be perfected first. So here's a basic cake recipe we have tried many many times and you should too. Once you make it your own, it would allow you to make a variety of other complex cakes. And this is not to say that this one isn't a great tasting cake - it's our all time favourite.



Ingredients 
1 cup + 1 tbsp all purpose flour
1 cup icing sugar
3 eggs
1/2 cup oil
1/2 cup milk
2 tsp vanilla essence
1 spoon baking powder 
Pinch of salt
1/2 cup roughly chopped walnuts (chilled and coated with 1/2 tsp flour)

Method

1. In a grinder add sugar, eggs, milk and oil. Mix it well.

2. In a separate bowl, mix flour, baking powder, salt.

3. Add mix from grinder to the bowl and whip it well. Ensure that you whip the batter in one direction.

4. Add vanilla essence and mix well.

5. Now add walnuts from top and transfer it to greased and dusted cake mould.

6. Bake it in the pre-heated oven at 220 degrees for 10 mins, then 200 degrees for 10 mins and then at 180 degrees for 30 mins. Following this is the most critical part to ensure the right texture.

7. Insert a knife or a toothpick in it. It should come out clean.
