Mango Vanilla Custard Tart

Mango custard is a childhood favorite so when we see mangoes in the season, we immediately go to make custard as well. But now, given the abundance of time in the lock-down, we wanted to create a slightly more complex version! 

But truth be told, a simple vanilla custard and mango still wins over everything. However, if you want to celebrate something or impress someone, read on....



Ingredients 

For Tart
1 cup maida
1/2 egg
50 gms chilled butter
1/3 cup icing sugar 

For Vanilla Custard 
3 large egg yolks
1/4 cup sugar
2 Tablespoons all-purpose flour/maida
2 Tablespoons cornflour
1 1/4 cups whole milk
1 tsp vanilla essence
large mangos, cut into equal thin slices - try to make the slices as similar as possible, will allow in a pretty decoration

Method

Filling
1. In a bowl whisk eggs yolks and sugar together until completely mixed

2. Add maida and cornflour to eggs and sugar mix and keep mixing until smooth

3. Heat the milk (do not boil) and then add this to eggs mix very slowly. Continuously whisk the mix to avoid curdling

4. Cook this mix in a pan over medium heat by continuous stirring until it boils and thicken. Keep whisking for another minute after turning the gas off. 

5. Transfer this mix to a bowl and cover it with cling foil and put it in a bowl filled with ice and water to bring it to room temperature.

6. Whisk the pastry cream to avoid lumps and transfer it to tart once at room temperature. Level it properly 

7. Start decorating it with finely cut Mango slices. We started from outside to inside

8. Keep it in fridge for 2 hours and enjoy cold
