Vegan Mandarin Salad


This was on a dull Monday evening, and we were thinking of how to make it more interesting. And the easiest way for us to light up our day is to cook a satisfying meal.

So this another regular Monday turned interestingly different when we moved away from the meaty feasts of the weekend, and made Vegan Mandarin Salad. Also, we still restricted the dish to under 400 calories (we would like to believe!). 
Vegatarian Tofu Chinese

Ingredients

200 gms Tofu – cut in 1 inch cubes
100 gms Soba Noodles
Peanuts for Garnishing
1 Red Bell Pepper
Carrot Ribbons
2 Spring Onions

For Marinade
2 Tbsp Kikkoman Soya Sauce
2 Tbsp Seasame Hot Sauce
1 tbsp Sweet Chilli Sauce
1 clove fresh minced Garlic
2 cm piece of grated Ginger
½ tsp Brown Sugar
Black pepper
Salt
Lemon - as per taste

Method
1. Marinate Tofu for atleast 1 hour
2. Toast Tofu in a non stick pan with a few drops of Olive oil and reserve the marinade
3. Mix other ingredients in the marinade along with the toasted Tofu
4. Add boiled noodles
5. Garnish with peanuts and serve
