Multigrain FlatBread with Olive Tapenade

As one graduates in the art of cooking, there is a realization that you can do only so much with a similar set of ingredients. To venture out and try new cuisines and recipes, one would most likely need to use newer ingredients which are not very commonly used in Indian cooking.

Two of such ingredients we have recently become very fond of are - kalamata (black) olives and fresh mozzarella cheese. Easily availability of fresh mozzarella cheese in India has completely changed our cooking aperture. We use it pretty often now and just love to have it in any form. We had recently tried these two ingredients in the form of the Italian Pesto PizzaThis time we experimented with a sort of a Mediterranean recipe by making a flatbread / pizza by making an olive based spread. This is a great snack for any menu setting!


Ingredients

For olive tapenade
20 Kalamata olives (or general black olives)
2 cloves of garlic
1 tsp olive oil


For flat bread
1 cup multigrain flour (or wheat flour)
1 packet (2 tsp ) active dry yeast
1 tsp honey
½ tsp salt
½ tsp smoked paprika
½ tsp garlic powder
½ tsp oregano
¼ tsp chilli flakes
1 tbsp olive oil
Warm water – to prepare the dough

For toppings
1/2 Zucchini – cut in thin slices
2 Onions – cut in thin slices
Rosemary
Fresh mozzarella cheese – as per taste (of course any other cheese will work as well)



Method

Olive tapenade

1. Grind pitted olives, garlic and olive oil in a grinder. Its ready. Yes, it is that easy only

For Flatbread

1. Take flour in a plate and prepare a well in center and add oil and honey. Sprinkle all other ingredients and knead the dough with warm water.

2. Let the dough rise for at least 2 -3 hours. Knock the dough after every one hour.

3. Divide dough into 2 parts and roll them into flat bread.

4. Spread olive tapenade on the base.

5. Add a layer of fresh mozzarella cheese.

6. Spread finely sliced zucchini and onion on it and sprinkle rosemary


7. Bake it for about 10 mins at 250 degrees in a pre-heated oven
