Breakfast Quesadillas

There are some dishes that are for all times of the day. From sandwiches / burgers to our very own idli sambar. Another dish we have cooked for different meals is quesedillas. We usually make them stuffed with spinach and corn for dinners but this time decided to make one for breakfast. Eggs was obviously going to be a part of the deal but we made it more fun by adding some sausage bits and loads of cheddar cheese! Slurppp...



Ingredients (Serves 2 )

2 corn tortillas
1 bell pepper diced - mix yellow, red and green
1 onion chopped
1 tomato chopped
2-3 chicken sausages
2 large eggs
Grated cheddar cheese
Butter
Salt
White pepper

Method

1. Sauté onion and bell pepper in oil / butter. Add tomatoes and quickly remove it from heat.


2. Slice sausages in circular discs and sauté in butter.


3. Now, add salt and pepper to eggs and whisk them well. Prepare scrambled eggs.


To assemble

1. In a non stick pan, heat some butter and then place tortilla. Keep heat on low to avoid getting into brown.

2. On half tortilla, load it with cheese, then add vegetables mix, scrambled eggs and sausages. Again load it with cheese.


3. Fold tortilla into half and and crisp on both sides.

4. Repeat the same with other tortilla

Enjoy warm quesadillas on a leisurely Sunday morning!
