Watermelon Gazpacho

A great hobby of ours is to remember the meals we have had on our vacations. From the wonderful dinner at Sushi Lounge in New Jersey to the local falafel outside the pyramids in Cairo, Egypt! In one such recent nostalgic session, we remembered the first meal we had in Barcelona, where we had Gazpacho - A cold soup which goes so well in the Spanish summer. Full of flavour and colour, just like that country! Gazpacho is typically tomato based but we made our own twist by adding a bit of watermelon and spice to adjust the flavours. 

You wouldn't believe how quickly this one gets made. And did we already say how healthy it is? 



Ingredients (Serves 2)

3 tomatoes
1 small cucumber
1 small onion
1/2 cup finely chopped bell peppers
1 cup de-seeded watermelon cubes
1 tsp vinegar
1/2 tsp Worcestershire sauce (optional)
2 tbsp extra virgin olive oil
1/2 tsp tobasco
3 cloves garlic
1 tsp dried thyme
Salt and pepper

Method

1. Put all the ingredients in a mixer-grinder and grind into the soup with a fine consistency. 

2. Adjust the salt and chill for about 15 minutes before serving.

Use finely chopped watermelon pieces and a drizzle of olive oil for presentation.
