Watermelon and Mint Salad

Its sweltering here in Delhi and most part of India. While that is the downside of living in this part of the world, it is a bit compensated by the arrival of summer fruits. One of our favourites is watermelon, and we present a refreshing way of having this juicy treat. This one is a classic, and we saw it at multiple food blogs. Presenting here our version of this really simple recipe.

Ingredients

Watermelon - 2Kg
Feta cheese - 100gm (optional)
Mint - 1/4 cup
Lemon juice - 2 lemons
Salt
White pepper

Method

1. Scoop out watermelon balls with a melon baller and de-seed as much as feasible. Keep in a large bowl

2. In a small bowl, add the lemon juice, salt, and pepper

3. Crumple the feta cheese, finely chop the mint leaves, and add to the watermelon. Add the lemon juice mixture and toss to coat properly.

There you go, the salad is ready. Not much mystery here, and preparation time is probably around 15 minutes
