Peanut Butter and Chocolate Cake

Cooking is bliss but its even more enriching when you cook for a purpose, for some occasion or for someone. And what better occasion than a Birthday to cook a decadent cake! It's exactly what we did for Sis-in-Law's birthday recently - transformed the basic vanilla cake's recipe into a delicious and not over indulgent peanut butter and chocolate cake. A moist cake base topped with a nutty frosting. Bliss indeed !





Ingredients

Cake
1 cup flour
1 cup icing sugar
2 eggs
1 tbsp baking powder
3 tbsp peanut butter
30 gms butter
1/2 cup boiling water
1/4 tsp salt
1/2 cup milk
1 tsp vanilla essence
1 tbsp cocoa powder

Frosting
3 tbsp cocoa powder
1 tsp brown sugar
30 gms butter
2 tbsp peanut butter
1 tbsp roughly chopped dark chocolate
1/2 cup roughly chopped pecans
3/4 cup milk

Method

For Cake
1. In a bowl, mix flour, baking powder, cocoa powder and salt

2. In a grinder add sugar, eggs and milk and mix well.

3. In a pan, heat butter and once it is melted add peanut butter to it. Stir well.

4. Add boiling water to the pan and let the mix simmer for 1 min.

5. Now add mixture from grinder and pan to flour bowl and stir well to ensure batter has uniform consistency.


6. Pour the batter in the greased mould and bake it in a pre heated oven at 220 degrees for 10 mins and then at 180 degrees for 30 mins.

7. Insert a toothpick or knife in the cake. If it comes out clean, cake is done.



For Frosting
1. In a pan, add butter. Melt the butter and add cocoa powder, brown sugar in it and stir well.

2. Now add chocolate, peanut butter, pecans and milk and let it cook till it gets thick and we achieve desired consistency.


Assemble
Cut a fine layer from the top of cake once it cools down to get uniform level. Now pour frosting on top of it and level it.

Leave the cake for 1 hr for frosting to cool down properly.

Delicious cake is ready!
