Omelette Pizza

Few things excite kids than pizza, may it come in any form. So while the bread and bun pizzas are made regularly at home, we wanted to experiment with eggs! What we did was fairly easy - replace the pizza base crust with an omelette. Notice the steps to get that right feel of an omelette and a pizza. Perfect to cook for kids winter breaks.



Ingredients

6 eggs 
1/3 cup grated mozzarella cheese
1 cup finely chopped veggies - bell peppers, capsicum, onion, mushrooms
2 tbsp pizza sauce
Oregano to taste
Salt and pepper to taste
Butter and olive oil to cook

Method

1. Start by slightly cooking the veggies in olive oil. Add pizza sauce, oregano, salt and pepper to taste. You should not cook the veggies for more than 8-10 minutes.

2. Whisk the eggs in a bowl and add, 1 tsp water and salt and pepper as you whisk.

3. Take a flat bottom nonstick pan and melt butter + olive oil. Make sure it is coated from all sides.

4. Add the whisked eggs to the pan and let it cook for about 2 minutes.

5. Now add the veggies first and then the cheese on top of the cooking omelette.


6. Lower the flame, cover with a lid and let it cook for about 15 minutes till the top is well done.

Take out carefully and serve as pizza slices. Sprinkle some oregano on top to garnish
