Matka Kulfi

A lot of things completely change as you grow up so you really relish the ones that do not. So while we don't get to have our Moms' home cooked food every day now, we totally love when they make their signature things during those specific times of the year. One of them is M's mom's Kulfi or homemade ice cream during summers. It's irresistible... 



Ingredients
1 litre full cream milk
100 gms khoya
6-7 cardamom - powdered
10-12 Pista - cut in slices
2 tbsp sugar

Method
1. Boil milk in heavy bottom pan and let it simmer till it reduces to half

2. Add khoya and once it mixes add sugar and then cook for 5 min on slow

3. Add, cardamom powder and pistachios / pista and remove from gas

4. Pour into moulds when mix has cooled off

5. Freeze for 6-8 hours or overnight

Enjoy with faluda or just like that

Summers are not so bad!

Tip: instead of khoya, you may add bikaneri burfi (200 gms) Don't forget to adjust sugar
